It doesn’t get any easier than Instant Pot Buffalo Chicken! Only two ingredients and you can make juicy chicken for sandwiches, wraps, and salads.
Buffalo Chicken Ingredients
You only need two! Chicken and hot sauce. It is not just for buffalo chicken wings! I keep a bottle of hot sauce in my pantry and some chicken and buns in the freezer and I can always make buffalo chicken sandwiches in a pinch.
What is hot sauce?
Buffalo wing sauce is not hot sauce. For this recipe, you want hot sauce. It doesn’t have to be this brand. I typically by the store brand at Aldi’s. Buffalo wing sauce has other ingredients besides the hot sauce. You can make your own buffalo sauce for wings, but remember it is different than hot sauce. It is a mixture of hot sauce and butter. Start with more hot sauce than butter about 3/4 cup hot sauce to a 1/2 cup butter. Add more butter if it’s too spicy. The ratio is up to you really, but remember for this recipe we don’t need that butter. Just grab a bottle of original cayenne pepper sauce.

It is easy to make buffalo chicken when you have an instant pot. It makes for a quick and easy chicken recipe to add to your dinner line up. Add chicken and a bottle of hot sauce into the inner pot. I typically use chicken breasts and cut them in half or so. Chicken thighs could also be used in this recipe. Using chicken breast will make it lower in fat and a bit more healthy. Cook for 10 mins on high pressure if the chicken is frozen cook for 20 mins. You can also make slow cooker buffalo chicken if the crockpot is your kitchen appliance of choice.
How to shred chicken?
My easiest tip to shred chicken is to use an electric mixer. If you have a handheld mixer you don’t even need to dirty another bowl. Once the chicken is cooked place the beaters of the electric mixer right into the instant pot and go. It quickly shreds the chicken perfectly. This is how we make shredded chicken for tacos in the Instant Pot.
How to cook juicy tender chicken?
The pressure cooker is a great way to cook tender meats. There is a trick though! Make sure you allow a 10-15 min natural release. If you can let it totally naturally release all the better!
Buffalo Chicken Sandwiches
Here is how we make buffalo chicken sandwiches at our home. Pile the chicken on a bun and top with blue cheese or ranch dressing. Serve with something crunchy like celery sticks or a pickle.
I eat dairy and gluten free so I put the shredded chicken into a lettuce wrap. I omit the salad dressing or use dairy free. This chicken is also great in quesadillas! YUM! If you love that spicy buffalo flavor you might love my buffalo chicken dip it is always a favorite at our house. How about these chicken wings. They look super delish!

Instant Pot Buffalo Chicken
Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 bottle buffalo wing sauce
- lettuce leaves
- buns
- ranch dressing or blue cheese salad dressing
Instructions
Using the Instant Pot, add chicken and hot sauce to the inner pot. Make sure to get some sauce under the chicken. Close lid, seal pressure valve, and set on high pressure for 10 minutes. When time is up, naturally release pressure for 10 minutes. This will allow for more tender chicken however if in a hurry manually release it by flipping the valve.
- Remove the lid, use an electric handheld mixer shred the chicken in the Instant Pot.
For serving
- Place 1/4 to 1/3 cup of chicken into each bun or lettuce leaf, top with lettuce or sliced cabbage. Add ranch or blue cheese over the top.

Just got a chuckle…. your directions say easiest way to shred chicken is with an “eclectic mixer”…..well….mine is kind of that way…works when it wants , kind of wonky, not balanced…. I’d say it was ECLECTIC alright!!!!
