Instant Pot Chicken Tacos will become your go-to easy meal! This meat is seasoned perfectly and is perfect for any dish that you need chicken taco meat. I keep this recipe to go in my freezer and in under 30 minutes, I can have tacos on the table. I have a second inner pot for my Instant Pot so while I am shredding the chicken I can be making Mexican rice and beans.  I am a big fan of the Instant Pot. I use this as a freezer dump meal. I place the following ingredients into a 1-gallon zip lock bag.

Chicken Tacos Meat Ingredients

  • 2 pounds skinless chicken breasts, cut into large chunks
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 cup water

When you are ready to cook place the frozen contents from the bag into the inner pot of the Instant Pot.  Add 1/2 cup water to the instant pot and cook on high pressure for 18 mins.  Allow 5-10 min natural release. Allowing time for natural release helps make the meat tender.

Instant Pot Shredded Chicken

Now here is the trick that makes perfectly Instant pot shredded chicken in seconds! Use your hand mixer to shred the chicken. I leave the little bit of liquid in the Instant Pot when I shred.  It is just enough liquid to make the meat juicy.

Chicken Tacos

Prep Time 12 minutes
Cook Time 18 minutes
Total Time 30 minutes
