Here is what you will need to make super moist banana bread.
- yellow cake mix
- small box of vanilla pudding
- eggs
- bananas
- vegetable oil
- vanilla extract

- Mash ripe bananas with a fork and set aside.
- In a large bowl beat eggs until they are pale. They will slightly thicken. A minute or two with a hand mixer works.
- Add in the rest of the ingredients and mix well.
- Fold in mashed bananas.
- Pour batter into two bread pans sprayed with cooking spray. Bake in a preheated oven until a toothpick inserted in the center of the loaf comes out clean.
TIP: When you find yourself with ripe bananas but can’t make banana bread, no worries. Place the bananas in a zip-lock bag and place them in the freezer. They will be ready whenever you need ripened bananas.

- 4 eggs

- 3 ripe bananas mashed

- In a mixing bowl beat eggs with a mixer until pale and thick. Add in cake mix, pudding, oil and water and mix well. Fold in mashed bananas. Pour batter into two medium sized loaf pans. Bake at 350 degrees for 45 – 60 mins or until a toothpick inserted in center comes out clean.

Jane I think it is worth a try. I would choose the size of Sugar-free pudding that is the closest equivalent to the small pudding box.
Can you make it with sugar free cake mix and sugar free pudding? If so, it called for the 3.4oz for the pudding but the SF boxes I’ve seen 1oz 2.1oz 1.5oz .9oz 1.4oz. I wasn’t sure which oz to use.

Hi…I have 2 loaf pans . Each is 8 1/2 by 4 1/4 inches. Will they be big enough for this recipe, or do the pans need to be bigger? The recipe is Cake Mix Banana Bread.
