Super healthy eating doesn’t mean you can’t enjoy a slice of toast or a sandwich. My paleo sandwich bread has a great flavor and lovely texture.

Paleo Sandwich Bread (Nut-Free) Recipe

Yields: 1 loaf

Prep: 5 minutes | Cook: 1 hour | Total: 1 hour 5 minutes

Ingredients:

Ingredients for paleo bread: 6 large eggs, 2 cups of cassava flour, baking powder, Himalayan Sea salt, apple cider vinegar, honey, avocado oil, and filtered water, by Skip to my Lou.

6 large eggs

2 cups cassava flour

1 teaspoon baking powder

1 teaspoon himalayan pink sea salt

1 tablespoon apple cider vinegar

1 tablespoon honey

½ cup avocado oil

½ cup filtered water, room temperature

Directions:

1. Preheat oven to 350 degrees F. Spray a 9×5 loaf pan with cooking spray or add a piece of parchment paper to the pan (keep side pieces long to use as handles).

2. Beat eggs in a medium mixing bowl. Add apple cider vinegar, honey, avocado oil and water to the bowl (not necessary to mix).

3. Add cassava flour, salt and baking powder to a large mixing bowl. Whisk to combine. Gradually add the wet ingredients into the dry ingredients in the large bowl and stir to combine, breaking down larger lumps.

4. Pour the batter into prepared loaf pan and place in preheated oven for 1 hour.

5. Remove from oven. Carefully remove bread from loaf pan and place on a cooling rack to cool for 1 hour before cutting.

6. Allow bread to come to room temperature (at least 2 hours) before placing in an airtight container.

Let’s talk about Cassava Flour and what to do if you Can’t find it

Cassava flour is made from the root of the cassava plant. It is a popular flour for gluten-free, grain-free and nut-free recipes. If you cannot find cassava flour, there are acceptable substitutes and I’ve listed them below with their limitations.

  • Tapioca Starch is also derived from the cassava plant and makes an acceptable substitute for cassava flour with the understanding that tapioca starch does not have the thickening properties of cassava flour. So you will need to use a thickening agent when substituting Tapioca flour for cassava flour.
  • Arrowroot Flour is made from an Indonesian root and is very high in fiber and potassium. Its neutral flavor and color make it an ideal substitute.
  • Potato Starch can be used as a substitute with the knowledge that it will make baked goods much heavier because of the natural thickening properties of potatoes.
  • Chickpea Flour can be substituted at a 1:1 ratio with cassava flour with the understanding that Chickpea Flour has a strong, nutty flavor.
  • Tree Nut Warning-Stay away from Almond Flour if there is a known tree nut allergy. If there is not a concern, Almond Flour can be substituted for cassava flour.
  • The jury is out on whether a coconut is a tree nut, so proceed with caution if you have a tree nut allergy. Coconut Flour can be used as a substitute, but in smaller amounts.
  • Rice Flour is probably the best and safest substitute for cassava flour out there.

Cook Time 1 minute
