Ingredients for Chocolate Covered Strawberries
Getting these ingredients ready ahead of time will help this project flow smoothly. Read the instructions before starting, so you can gather the glass bowls, saucepans with water, sheet pans and parchment or waxed paper you’ll be using.
- 1 package good quality (Ghirardelli or Guittard) semi-sweet chocolate chips (about 10-12 ounces) (reserve a generous tablespoon of chips)
- 3 ounces white chocolate chips
- 2 pounds of strawberries with stems (about 20), washed and dried very well and room temperature
- *Optional toppings: heart-shaped sprinkles, finely chopped nuts like pistachios, pecans, or almonds
Step-by-Step Instructions for the Best Chocolate Covered Strawberries

- Put the semi-sweet and white chocolates into 2 separate heat proof bowls.
2. Fill 2 saucepans with a couple inches of water and bring to a simmer over medium heat, set the bowls of chocolate over the water to melt. Melt all but 1 heaping tablespoon of the chocolate chips,
3. Stir until smooth. (Alternatively, melt the chocolates in a microwave-safe bowl at half power, for 1 minute, stir and then heat for 30-second intervals stirring at each interval until melted.)
4. Once the chocolates are melted and smooth, remove from the heat and add the reserved chocolate chips. Stir until the additional chocolate has melted.
5. Line a sheet pan with parchment or wax paper.
6. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the glass bowl.
7. Set chocolate-dipped strawberries in a single layer on the parchment paper.
8. Repeat with the rest of the strawberries.
9. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries. (Optional finishes: roll in finely chopped nuts or heart shaped sprinkles before chocolate sets.)
10. Set the strawberries aside until the chocolate sets, about 30 minutes
How to make your own double boiler:
- Fill a saucepan ¼ full with water and bring the water to a low gentle boil.
- Reduce the heat to the lowest setting and set a large (heat-proof) bowl on top, making sure the bowl tightly covers the pot. Make sure there are a few inches of space between the bottom of the bowl and the water.
- Add chocolate to the bowl and stir constantly, until melted and smooth.
- Remove the bowl from heat and add a handful of reserved chocolate to the bowl to temper the chocolate. Stir until the additional chocolate has melted.
Serving and Storage tips
You can serve these beauties as soon as the chocolates set. Store uncovered, out of direct sunlight, for 1 day. Then pop in the refrigerator in airtight containers for up to 3 days. Chocolate covered strawberries do not freeze well, because the strawberries will release juice when thawed.
Red White & Blue Strawberries

or white candy coating
- 2 lbs long-stemmed strawberries
- 4 ounces blue sanding sugar
Instructions
- Slowly melt the chocolate in a double boiler or melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for 30 second intervals stirring at each interval until melted.
- Once the chocolate is melted and smooth, remove from the heat and add the reserved chocolate chips. Stir until the additional chocolate has melted.
- Line a sheet pan with parchment or waxed paper.

- Immediately dip bottom of strawberry in blue sanding sugar.
- Set strawberries on the parchment paper.
