Strawberry flavor fans, I’ve got a cookie for you! My strawberry cake mix cookies recipe is simple to do and the sublime homemade buttercream frosting makes it a delicious, fast and easy cookie.

Strawberry cookies come together quickly and only bake for 9 to 11 minutes because they need to be pretty and pink, not brown. The homemade buttercream frosting is worth the effort, trust me! (Recipe included after cookie pictures.)

Ingredients for Strawberry Cake Mix Cookies

  • 1 box strawberry cake mix
  • 2 eggs at room temperature
  • ⅓ cup vegetable oil (using melted butter will cause cookies to spread)
  • White frosting (my sugar cookie frosting recipe)
  • sprinkles (red, white and pink)
  • mixing bowl and hand mixer or stand mixer
  • baking sheets and a cooling rack

Instructions

  1. Preheat oven to 350 degrees. 
  2. Line baking sheets with parchment paper
  3. Mix together dry cake mix, 1/2 cup oil and 2 eggs.

4. Use a cookie scoop to portion out the batter and pour it on the sheet. Space cookies apart on baking sheet. ​​Bake for 9-11 minutes, or until the cookies are set. Cookies need to stay pink, not turn brown.

5. Remove from cookie sheet after 5 minutes. Cool on a wire rack. Frost when cookies are cool enough that frosting will not melt. Finally, add 1/2 teaspoon of sprinkles to each cookie.

6. Serve in a single layer on a platter or board. Store any leftovers in an airtight container.

  • 2/3 Cup unsalted butter at room temperature
  • 1/2 C milk or cream
  • 2 lbs. confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon creme bouquet flavoring

Pro Tip: Creme Bouquet essence gives this frosting a hint of ‘wedding cake’ flavor with its almond, vanilla and citrus flavor profile.

  1. In a large mixing bowl, beat butter for about 3 minutes until light and fluffy, scrape down sides of the bowl with a spatula.
  2. Add confectioners’ sugar in a little at a time, beating well between each addition.
  3. Add mild/cream and mix well.
  4. Add vanilla and Creme Bouquet flavorings and stir in until combined.
  5. Optional- color this frosting with icing gel colors. Use one drop at a time and mix well before adding more gel color.
  6. Store unused frosting in the refrigerator.

Ingredients  

  • 1 box strawberry cake mix
  • 2 eggs
  • 1/3 cup oil
  • white frosting
  • sprinkles

Instructions 

  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • Mix together dry cake mix, 1/2 cup oil, and 2 eggs.
  • Scoop dough onto baking sheet. I use a cookie scoop to make the balls.
  • ​​Bake for 9-11 minutes, or until the cookies are set. You don’t want them to brown.
  • Cool, frost and add sprinkles.
