HoW do You make Weight Loss Soup
Cook this healthy soup on the stovetop or it would be great made in a slow cooker. I am going to give it a try in the Instant Pot. Cooking it for 8 mins on high pressure.
In a large pot, brown ground turkey or cook chopped chicken. Once the meat protein is cooked, drain the fat if there is any.
Prepare your fresh vegetables by chopping the onion, mincing the garlic, seeding and chopping the bell peppers, and slicing the mushrooms. Add all the fresh vegetables to the browned chicken.
Stir the contents of the pot together and cook until the vegetables are soft, about 5 minutes.
Stir in the remaining ingredients, except cilantro and parsley. Cover and simmer for 15 minutes.
A cup of green beans (fresh or frozen) and or a couple of cups of shredded cabbage would also be a nice addition. If adding these veggies make sure you simmer the soup for 30 minutes or until the cabbage is softened.
Lastly, stir in cilantro and parsley. Since cilantro and parsley can lose their flavor quickly when boiled or simmered add them last. By adding fresh herbs like these last you will add freshness and color to your soup.
This soup is delicious and hardy. I really think that it is the best soup for weight loss. I definitely prefer the tomato juice base to beef broth, vegetable broth, or chicken broth base. Who would think a diet soup recipe could be so good!?
Let’s dive in and get our diet on!
Why this weight loss soup diet really works!
Here is why:
- Lean Protein
Protein curbs the appetite and can boost post-meal metabolism by 25% and stimulates fat-burning hormones. Adding protein will keep you feeling fuller longer than with just a plain vegetable soup recipe.
- Tomatoes
Tomatoes are rich in vitamin C and other natural acids that help your liver break down fat faster.
- Beans
Beans can stabilize blood sugar which reduces the number of fat-storage hormones our bodies make. While I use black beans in my soup kidney beans or another bean of your choice would work.
- Onions
Onions are loaded with chromium, which also helps with fat storage hormones.
- Cayenne
Cayenne kicks up the heat and kicks up the metabolism up to 20%. If you don’t have cayenne pepper throw in about 1/4 teaspoon red pepper flakes.
- Garlic
Garlic might actually keep pre-fat cells turning into fat cells.
- Cilantro and Parsley
These herbs help flush toxins from your system.
- Mushrooms
Mushrooms provide protein, vitamin C, and iron.
- Bell Peppers
Bell peppers contain beta-carotene, which gives you antioxidant and anti-inflammatory benefits
- Cabbage
Many weight loss soups have cabbage while it isn’t necessary for my recipe but there are some great health benefits by adding this vegetable. Cabbage is low in fat and high in fiber. It is also great for keeping skin looking healthy and glowing with antioxidants (including vitamin C and beta-carotene).
Fun Fact!
Did you know just eating 2 ounces of cooked tomatoes (the amount in a serving of this yummy soup) can reduce bad cholesterol by up to 10%? As you can see this soup is good for you any time not just when you need to lose a few pounds. I often make it to keep on hand for a quick lunch that keeps me satisfied all day!

If you place your cut mushrooms near a sunny window for about an hour, they soak up the Vitamin D. And it doesn’t cook away when heated, either. Another great way to improve your health naturally!
So glad you liked it Michele!
This healthy chili is simply delicious. Trying to cut way back on red meat & wasn’t sure if the turkey would fly with the fam but it absolutely did! To up the fiber I used 2 cans of beans and a lot more minced garlic since we love garlic. Served it topped with cilantro, green onion, and diced avocado with a squeeze of lime. Of course being in Texas, a side of cornbread made the perfect meal for us. Thank you for the recipe!
We love this soup! Don said it’s better than Chili. It is so ironic that you sent this recipe and I had already looked it up to make it today.
Hi Charis, it has 32 ounces of no sodium tomato juice for the liquid and also the liquid from the canned tomatoes. Often my tomato juice comes in a larger container and I just add it all in.
I’d love to try this soup but I can’t seem to find what the liquid in the soup is! Is it chicken stock or water?
So glad you liked it! It is one of my faves!
Fantastic recipe! I’m definitely trying to eat better, so I made 2 batches so I could have leftovers to eat throughout the week.
Adding this to my menu for everyday..lol!! Love that it’s so good & tasty, but so healthy!
This soup is SO yummy! Easy and healthy.. I love it!
Really loved this soup! So delicious.
You can but they recommend turkey and I used it. I liked it better than beef due to no grease when you fry it. I just made another pot today. To me it reminds me of chili.
Patricia, yes you can leave out the mushrooms.
Can you leave out the mushrooms
Love this recipe! I used it last January and came back to it today to kick off the new year with some healthy eating! I’m going to make it a point to make it more than once this year though since it is really tasty. I added some green and red cabbage to it.
