- Italian sausage (mild Italian sausage or hot Italian sausage)
- Yellow onion
- 2 large carrots
- 4 cloves minced garlic
- Flour
- Chicken stock or broth
- Refrigerated tortellini
- Kosher or sea salt
- Black pepper
- Italian seasoning
- Fresh chopped spinach
- Half and half or heavy cream
How To Make Sausage And Tortellini Soup
This Italian sausage tortellini soup is a great recipe that is so simple to make and comes together easily.
- In a large pot, cook the sausage until browned. Drain any fat and set the sausage aside.
- Sauté onions, and carrots, for about 5 minutes or until the vegetables are soft. Add the garlic and sauté for an additional 1-2 minutes, or until fragrant, stirring occasionally to prevent it from burning.
- Whisk in the flour and cook for 1 minute.
- Gradually add in the chicken broth, whisk to combine. Continue cooking until the mixture reaches a simmer, then reduce heat and simmer for about 6 minutes.
- Add sausage, tortellini, salt, pepper, Italian seasoning, spinach, and half & half. Simmer for 5 minutes, or until the tortellini is fully cooked.
- Serve immediately.
