Substitutions or Additions

Depending on your preferences, you can add several other ingredients to our basic vegetarian chili recipe.

For example, a little soy sauce can not only add to the flavor but darken the color too, while the zing of lime juice is something many people love. For that smokey flavor, consider adding chipotle or if you love extra heat, sprinkle some cayenne pepper. To bulk it up even more, you could add some sweet potatoes. If it’s too hot, you can add vegan sour cream to temper the heat a little. You could even top it with a little vegan cheese as an extra garnish.

How to Make Vegetarian Chili

You’ll need a crock pot for this recipe, which you will set to medium heat while cooking. Make sure you check out the video above before you watch the step-by-step guide.

Step 1: To start, add a tin of pinto, black, and kidney beans to your pot. Now add a cut-up red bell pepper, green chiles (use less if you want to cut down on the overall heat of the dish), and a cubed, large onion.

Bean there, done that! You need three different bean types for this vegetarian recipe.

Step 2: Add your spices. We use a tablespoon of garlic powder, oregano, cumin, and two tablespoons of chili powder as well as salt and black pepper to taste. As with all recipes, you can adjust the amount of spices you use according to your needs.

Once the beans are in the pot, spices such as chili powder, oregano, cumin, and salt and pepper are added.
Spicy! You can add more or less spices and green chili according to your personal taste.

Step 3: Now add the wet ingredients which are a can of diced tomatoes, a bowl of tomato sauce, and a third of a cup of water. Now mix everything thoroughly. While you don’t want it very runny, there should be a generous amount of liquid once thoroughly mixed through.

Following the addition of tomatoes, tomatoe sauce, and water, all the ingredients are mixed thoroughly.
Don’t forget to stir that goodness all around.

Step 4: Now let all those beautiful ingredients cook away for at least 20 to 30 minutes. You don’t want them to cook away to nothing, but you want to make sure the various beans are cooked till soft. Keeping the pot covered will help your cooking time and ensure a rich sauce for your vegetarian chili.

Once the vegetarian chili has cooked for around 30 minutes, it is ready to serve.
