I can’t wait to share this weight loss soup!  Have you heard of the soup diet? There are loads of weight loss soup recipes out there, but this one not only works it is delicious!

Eat this soup if you need to lose a few pounds give this protein-packed weight loss soup a try. It has all the ingredients to kick up your metabolism and help you start burning fat! The best part is it is so yummy and satisfying that you won’t even know you are on a soup diet! It is also gluten free and dairy free.

Weight Loss Soup Ingredients

You are going to love this soup packed with nutrient enriched ingredients. It is a great recipe!

  • Ground lean turkey (or shredded chicken) I personally like the ground turkey making this soup taste like a hearty chili
  • Onions
  • Garlic
  • Bell Peppers
  • Mushrooms
  • Tomatoes
  • Tomato juice
  • Lemon juice
  • Black beans
  • Cumin
  • Cilantro
  • Parsley
  • Cayenne Pepper

A cup of green beans (fresh or frozen) and or a couple cups of shredded cabbage would also be a nice addition.  If adding these veggies make sure you simmer the soup 30 minutes or until the cabbage is softened.

Ingredients

  • lbs lean ground turkey or shredded chicken
  • 1 onion chopped
  • cloves garlic  minced or pressed
  • 1 red bell pepper seeded and chopped
  • 1 yellow bell pepper seeded and chopped
  • 8 oz.  baby bella "crimini" mushrooms  sliced
  • 1 - 14 oz  can diced tomatoes
  • 1 - 32 oz  of reduced-sodium tomato juice
  • 1 Tbs. fresh lemon juice
  • 1 - 14 oz. can black beans rinsed and drained
  • 1 Tbs. ground cumin
  • 1/4 tsp. cayenne or to taste
  • 1/2 cup each fresh cilantro chopped
  • 1/4 cup parsley chopped

Instructions

  1. In a large pot, brown ground turkey or cook chopped chicken. There should be very little fat, is there is fat, drain.

    Add in onion, garlic, peppers, and mushrooms and cook until soft, about 5 minutes. Stir in remaining ingredients, except cilantro and parsley. Cover and simmer 15 minutes. Stir in cilantro and parsley.

Recipe Notes

This soup freezes really well. Makes 12-14 cups. 1 serving is about 2 cups and is about 275 calories.

Cook this soup on the stove top or it would be great made in a slow cooker. I am going to give it a try in the Instant Pot. Cooking it for 8 mins on high pressure.

      Hi Lisa, the first few days I would opt for veggies. If you must have fruit avoid high sugar fruit (bananas etc) and go for berries. Blueberries would be a great choice. You will be more successful if you aren't too restrictive. I am going to make this today. My snacks are going to be veggies and salads, along with blueberries and apple slices with nut butter.

    Hi Cindy. I was looking for a great soup to break my smoothie detox with. This one sounds wonderful, however, I do not eat meat. Would I be able to use a vegetarian protein crumble? Also, will garbanzo beans work instead of black beans? Thanks, Cindy!

      Kitt, I'm a big fan of quinoi. If you're not familiar with this, it's a high quality protein grain. Or seed, actually. I make up one or two cups a week and keep it in the fridge to add to salads and soups like this one. Never had much luck with protein crumbles.

      Mandy, me too! I cook it in my Instant Pot (only 8 minutes) then keep it in the refrigerator. I put about a 1/4 to 1/2 cup on salads for my lunch. I do a variety of salads, but one that I love is kale, sliced grapes, sunflower seeds, and quinoa. A lightly sweet salad dressing is good on this.

    Made this last night...and just meal prepped 6 big bowls full in the morning. So yummy! More like a chili after sitting overnight, but oh so good!!!!!
    I used ground turkey this time but will use shredded chicken next. This is a keeper recipe!
