Ingredients
2 lbslean ground turkey or shredded chicken
1onionchopped
4 clovesgarlic minced or pressed
1red bell pepperseeded and chopped
1yellow bell pepperseeded and chopped
8oz. baby bella "crimini" mushrooms sliced
1 14 oz can of diced tomatoes
1 32 oz can of reduced-sodium tomato juice
1Tbs.fresh lemon juice
114 oz can black beansdrained and rinsed
1Tbs.ground cumin
1/4tsp.cayenneor to taste
1/2cupeach fresh cilantrochopped
1/4cupparsleychopped
Instructions
In a large pot, brown ground turkey or cook chopped chicken. Once the meat protein is cooked, drain the fat if there is any.
Prepare your fresh vegetables by chopping the onion, mincing the garlic, seeding and chopping the bell peppers, and slicing the mushrooms.
Add in onion, garlic, peppers, and mushrooms and cook until soft, about 5 minutes.
Stir in the remaining ingredients, except cilantro and parsley. Cover and simmer for 15 minutes.
Stir in cilantro and parsley. Since cilantro and parsley can lose their flavor quickly when boiled or simmered add them last. By adding fresh herbs like these last you will add freshness and color to your soup.
