They’re just as delicious as regular sugar cookies, but so much easier to make. Plus, you can customize them with your favorite toppings. You will only need these easy to find items to make this sugar cookie recipe

  • 9 x 13 inch baking pan
  • cooking oil spray
  • parchment paper
  • 1 box of cake mix (I like white cake mix but yellow works)
  • eggs
  • cooking oil
  • 1 can of white or vanilla frosting (Betty Crocker, Duncan Hines, etc)
  • colorful sprinkles

That’s it! Only 3 ingredients and a tub of frosting. Using a cake mix omits the steps of measuring and using baking powder, baking soda, sugar, and flour. Yay!

SUBSTITUTIONS OR ADDITIONS and TIPS

Want to make chocolate or strawberry cookies? Use a chocolate or strawberry cake recipe.

Want a different flavor of frosting or different color of vanilla frosting? Use flavored frostings or food coloring to tint the vanilla frosting.

Don’t have a can of frosting? Make your own buttercream frosting by creaming 1 stick of unsalted butter, adding 1/2 t. vanilla flavoring and mixing sugar (2 cups of powdered sugar works better than granulated sugar), a dash of salt, and a couple of tablespoons of heavy cream. If you love sugar and like your frosting really sweet, add more powdered sugar.

  1. Preheat oven to 350 degrees F.
  2. Spray a 9×13 baking pan with cooking spray (this makes the parchment paper stick to the pan.) Line the pan with parchment paper (allow the edge of the parchment paper to extend past the ends of the pan to create ‘handles’ that make removal of the cookie bars easy.) Then spray the other side of parchment paper with cooking spray.

  4. Evenly press the dough mixture into the lined 9×13 pan.
  5. Bake for 15-20 minutes until the cookie bars are baked all the way through and lightly browned at the edges. Don’t over bake.
