Peanut Butter Cup Blondies

These rich gooey brown sugar blondies are over the top with the addition of mini Reese’s peanut butter cups. My boys thought they were amazing. If you are fan of peanut butter try these peanut butter and corn chip cookies. They are the perfect combo of salty and sweet!

Peanut Butter Cup Blondies

1/2 cup (1 stick) unsalted butter
1 1/2 cups firmly packed light brown sugar
1 1/2 tsp. vanilla extract
2 eggs
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1 cup Reece’s Miniature Peanut Butter Cups

Preheat an oven to 350°F. Spray an 8-inch  square baking pan with cooking spray. Line with line with parchment paper.

In saucepan, melt butter and brown sugar until sugar dissolves (it might not dissolve all the way). Let cool 10 minutes. Add in the eggs one at a time, beating well after each addition.  Stir in vanilla. Fold in flour and salt. Make sure mixture is completely cool and fold in the peanut butter cups. Scrape the batter into prepared pan and spread evenly.

Bake about 25-35  minutes. Don’t over bake.  Top will turn golden brown and slightly puffed.  Transfer the pan to a wire rack and let cool. Cut into bars and serve. Makes about 16 bars.

    We are slightly obsessed with Peanut Butter and Chocolate around here so I had to pin this!
    The recipe looks pretty simple and may be one that I use with my 13 year old daughter who I am teaching to cook!

    how is one cup of PB Cups enough???? Do you cut them in halves? Or could you spread the mixture in the pan, then place PB Cups in the mixture?
