Have you ever tried peanut butter cup blondies? These rich gooey brown sugar blondies are over the top with the addition of mini Reese’s peanut butter cups. My boys thought they were amazing.
If you are fan of peanut butter try these peanut butter and corn chip cookies. They are the perfect combo of salty and sweet!
How to Make Peanut Butter Blondies
You will need the following ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups firmly packed light brown sugar
- 1 1/2 tsp. vanilla extract
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup Reece’s Miniature Peanut Butter Cups
Prepare the baking pan by spraying an 8-inch square baking pan with cooking spray. Line with parchment paper.
In a saucepan, melt butter and brown sugar until sugar dissolves. Don’t boil. It might not dissolve all the way and that is okay. Let cool 10 minutes. Add in the eggs one at a time, beating well after each addition. Allowing the mixture to cool is important so you don’t get scrambled eggs.
Stir in vanilla. Fold in flour and salt. Make sure the mixture is completely cool and fold in the peanut butter cups. Scrape the batter into prepared pan and spread evenly.
Bake about 25-35 minutes. Be sure to not over bake. The top will turn golden brown and slightly puffed. Transfer the pan to a wire rack and let cool (if you can wait!). Cut into bars and serve.

Recipe Notes
Be sure to line the pan with parchment paper to make the bars easier to remove from the pan. I spray the pan, lay in the parchment paper then spray the top.

how is one cup of PB Cups enough???? Do you cut them in halves? Or could you spread the mixture in the pan, then place PB Cups in the mixture?
