There’s something unmistakable about biting into a warm Snickerdoodle sugar cookie, the cream of tartar gives it a dimension that sets it apart from other sugar cookies. And my Starbucks copycat recipe for Toffee Doodles has all the goodness of a sugar cookie with the surprise toffee bits center for the win!

You might be surprised how easy these cookies are to make! You’ll need the same ingredients for these as for most sugar cookies, except for the Cream of Tartar, which is very important in this recipe. You will also need toffee bits for the surprise center!

You will need to make this recipe

Toffee Doodle Cookies

  • white sugar
  • butter
  • large eggs
  • vanilla extract
  • all-purpose flour
  • cream of tartar
  • baking soda
  • salt
  • toffee bits

Cinnamon-Sugar Coating:

  • white sugar
  • ground cinnamon

Pro tip: With what type of butter do you bake? If you use unsalted butter, it is important to add the salt that the recipe calls for. If you use salted butter, you may be able to reduce the amount of salt you add.

Do you have an empty shaker in your kitchen? If so, you may want to make more of the cinnamon-sugar mixture to keep in the shaker! It is so handy to have for making cinnamon toast among other things!

Heath Bits o’ Brickle is a brand of Toffee bits you may find in your local store. Just make sure you don’t buy the chocolate covered Heath bar, unless someone will volunteer to remove the chocolate first!

HOW TO MAKE Toffee Doodle Cookies

  1. Preheat the oven to 400 degrees F (200 degrees C).

  5. Shape dough into walnut-sized balls.
  6. Make cinnamon-sugar: Combine sugar and cinnamon in a small bowl or zip-top plastic bag.
  7. Place dough balls in cinnamon-sugar and roll or shake until coated. Place 2 inches apart on ungreased baking sheets. Serving and Storing Your Toffee Doodles

As with any homemade cookie, they seem to be best while still warm from the oven! But, do allow the cookies to cool on a wire rack for a few moments before diving in!

Keep these toffee snickerdoodle cookies in an airtight container and eat them within 3 days to enjoy them at the peak of maximum freshness!

Toffee Doodle Cookie Recipe

Toffee Doodle Cookies

  • 1 ½ cups white sugar
  • 1 cup butter softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup toffee bits

  • 4 tablespoons white sugar
  • 4 teaspoons ground cinnamon

Instructions 

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Make cookies: Beat sugar, butter, shortening, eggs, and vanilla in a large bowl until smooth and creamy.
