Instant Pot Honey Chicken Ingredients
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup honey
- 1/2 cup soy sauce (I use gluten-free soy sauce or coconut aminos)
- 1/4 cup ketchup
- 1 tablespoon vegetable oil
- 1/4 teaspoon crushed red pepper flakes
- 2 pounds boneless, skinless chicken thighs, cut into chunks
- salt and pepper
- 2 Tablespoons cornstarch (saved for after cooking)
Tips for Honey Chicken
- Use an airtight container or a fold freezer bag that fits inside the Instant Pot after being frozen.
- No chicken thighs? You can use 2 lbs. of chicken breast without bones and cut into bite size pieces.
- This is a great freezer dump meal. Dump meals are great because they take very little prep. Typically there will be no cooking.
- No Instant Pot? This Honey Chicken can also be cooked in the slow cooker for about five hours on low from frozen (four hours if not frozen.)
- Garnish with sliced green onions and savory sesame seeds for an extra flavor kick.
Pro Tip
I have an extra inner pot my Instant Pot. When the Honey Chicken is finished cooking, I remove the pot from the pressure cooker and put it on my stovetop. While I am thickening the sauce, I am using my second pot to cook rice in the Instant Pot.
How to Make Instant Pot Honey Chicken
- Place all ingredients in a one-gallon freezer-safe bag or container.
- When ready to cook, remove from the freezer bag and place in the inner pot of the Instant Pot.
- Add 1/2 cup water to Instant Pot and cook on high pressure for 18 minutes. If not frozen cook for 12 minutes. For tender chicken use a 5 to 10-minute natural release.
- Remove about half a cup of liquid and mix with 2 Tablespoons of cornstarch. Pour this mixture back into the chicken and simmer to slightly to thicken the sauce.
