Weight Loss Soup

Weight Loss Soup
2 lbs lean ground turkey or shredded chicken
1 onion, chopped
4 cloves garlic, minced or pressed
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
8 oz. baby bella “crimini” mushrooms, sliced
1 – 14 oz can diced tomatoes
1 – 32 oz of reduced-sodium tomato juice
1 Tbs. fresh lemon juice
1 – 14 oz. can black beans, rinsed and drained
1 Tbs. ground cumin
1/4 tsp. cayenne, or to taste
1/2 cup each fresh cilantro, chopped
1/4 cup parsley, chopped
In a large pot, brown ground turkey or cook chopped chicken. There should be very little fat, is there is fat, drain.
Add in onion, garlic, peppers and mushrooms and cook until soft, about 5 minutes. Stir in remaining ingredients, except cilantro and parsley. Cover and simmer 15 minutes. Stir in cilantro and parsley.
This soup freezes really well. Makes 12-14 cups. 1 serving is 3 cups and is about 350 calories.
