These corn chip and peanut butter no bake cookies is one of those crazy recipes I just had to give a try. My friend calls these gooey peanut butter flavored Fritos, Kookie Cookies.

My friend Alice shared these super simple peanut butter no bakes with me and I loved them. It is kinda kookie to put corn chips in cookies,  but it is oh so delicious.

With only four ingredients these peanut butter no bakes come together easily and you don’t even need to turn on the oven. In minutes you have a delicious treat!  Be sure to not boil more than a minute. You want these cookies gooey like caramel. YUM!

How to make Corn Chip and Peanut Butter No Bake Cookies

Spread corn chips in a greased 15 in x 10 in by 1 in baking pan.

In a saucepan over medium heat, bring corn syrup and sugar to a boil, stirring frequently to help dissolve the sugar.  Boil 1 minute, no longer. Remove from heat and stir in the peanut butter. Stir until smooth. Pour over corn chips.

I thought a drizzle of melted semi-sweet chocolate chips would be a nice touch over the peanut butter Fritos. However, it really wasn’t necessary. Cool, break (tear — it’s gooey)  into pieces or…

These taste a little bit like peanut butter cornflake cookies nut have that more salty sweet combo!

Peanut Butter and Corn Chip No Bake Cookies

Only four ingredients to these simple yet delicious cookies.  I have heard them called Kookie Cookies!

Ingredients  

  • 1 corn chips 9.75 to 10.5 ounce bag
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup creamy peanut butter

Instructions 

Spread corn ships in a greased 15 in x 10 in by 1 in baking pan.

    In a saucepan over medium heat, bring corn syrup and sugar to a boil, stirring frequently to help dissolve the sugar.  Boil 1 minute. Remove from heat; stir in peanut butter until smooth. Pour over corn chips.

      1. Jo – corn chips are tortilla chips or fritos that you would normally dip in salsa — I love this recipe so easy and everyone loves it!

      5. It’s soooooo much better with only 1/2 cup of sugar, 1/2 cup of corn syrup and 1/2 cup of peanut butter! Cutting the saucy part in half keeps it from getting too thick which balances the sweet/salty factor and helps the chips to stay crispy!

      6. Epic fail. Peanut butter mixture looks more like refried beans. No way to pour it. Should have just made brownies out of a box.

      7. I made this with Rice Krispie’s, either put into a pan OR roll in a ball and dip the top in melted chocolate (more like a piece of candy) everyone loves them

      9. Delish! I put pretzels in a corner since pb & pretzels are my fave – turned out great too! Next time I’ll line the pan with parchment or wax paper on a day with lower humidity… super sticky but worth it!

      10. Great fun treats! The key word is treat. a special something to enjoy in moderation. Lisa McKenzie, I truly admire your ability to forego the occasional indulgence. However, for most of us, the the key to healthy eating is not utter deprivation, it is eating heathfully and enjoying special treats in moderation. No need to resort to insults.       11. First recipe EVER that I had trouble getting it off the pan and onto the serving tray….because they kept falling into my mouth. I actually felt a little ill from eating so much, not like me at all. This is a warning for all- do not make these if you like salty sweet gooey melt in your mouth treats. Yeow!
