This apple coffee cake is one of my go-to recipes when we are having overnight guests. It can be baked a day ahead and served the next morning. It is also great with cherry pie filling! You might also like this overnight coffee cake, this amazing egg casserole, or the world’s best quiche. Your house guests will feel totally pampered!
Apple Coffee Cake
1 1/2 cups sugar
1 cup butter, soften or slightly melted
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 tsp almond extract
4 eggs
3 cups all-purpose flour
21 ozs canned apple pie filling (cherry is delicious too)
Glaze
1 cup confectioners’ sugar
1 tbsp milk
pinch of salt
(sometimes I make a bit more glaze)
Preheat the oven to 350 degrees F. Spray an 11×15 inch jelly roll pan with cooking spray.
Beat sugar, butter, vanilla extract, almond extract & eggs on low until mixed well. Stir in flour, salt and baking powder. Spread 2/3 of the batter in the pan. Spread pie filling evenly over the batter. Drop the remaining batter evenly in dollops over pie filling. Bake until a toothpick inserted in the center comes out clean (check at about 25 minutes). Drizzle glaze over the top while still warm.
If you are serving tea with the coffee cake don’t forget the homemade sugar cubes.

When do you add the baking powder. I noticed its listed under ingredients but not mentioned in the instructions.
