This is the yummiest breakfast casserole ever! You will never need another egg casserole recipe again unless you need the best quiche recipe ever or my California egg casserole! I make these three recipes over an over!
This easy breakfast dish can be made ahead and baked in the morning making it perfect for house guests! It also reheats well. It for sure is an easy breakfast casserole. A slightly different take on a breakfast casserole is my California egg casserole.
Easy Egg Casserole
The addition of sun-dried tomatoes makes this recipe out of the ordinary. The combination of sausage, mozzarella, and the sun-dried tomatoes is divine! Trust me, you will be asked for the recipe!

Sausage, Sun Dried Tomato and Mozzarella Breakfast Casserole
This breakfast casserole uses a bit more unusual ingredients (sun-dried tomatoes and mozzarella) for an egg casserole, but it works! I am always asked for the recipe!
Preheat oven to 350°F. Spray 13x9x2-inch glass baking dish. Place sun dried tomatoes (found in a package in the produce section) in a bowl of water until soft --about 15 minutes. Brown sausage in medium skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, DRAIN WELL. Add onions and garlic and sauté until onions are tender. Add sun-dried tomatoes and cook another stir 1 minute. Spread sausage mixture in prepared dish. Cover with 2 cups mozzarella cheese. (Can be made 1 day ahead. Cover and refrigerate.)
Whisk eggs and half & half in a bowl to blend well. Pour egg mixture over sausage mixture in dish. If making ahead place egg and cream mixture in a separate container and pour over sausage mixture before baking. Bake until top of casserole is golden brown and knife inserted into center comes out clean, about 40 minutes. Let stand 5 minutes before serving.

To substitute half-and-half you can:
Mix 1/2 cup whole milk + 1/2 cup light cream
or
Mix 3/4 cup whole milk + 1/4 cup heavy cream
or
Mix 2/3 cup skim or low-fat milk + 1/3 cup heavy cream
or
Place 4 teaspoons melted unsalted butter in a measuring cup, then add enough whole milk to equal 1 cup
Hope this helps!
Half and half is equal blends of whole milk and light cream. In the U.K. Known as half cream.
Sounds delicious, but please tell me what half and half is? Is it some sort of cream? Also, is it mince you are using, or is it sausage, just cut up into pieces?

Sounds wonderful. I have a breakfast casserole recipe that was given to me by a neighbor. it’s good, but it’s mostly potatoes. I keep meaning to redo it and reduce the potatoes and increase the eggs

We make something similar at Christmas, with dried bread cubes cheddar etc. added in and then it sits in the fridge overnight, ready to be popped in the fridge, as soon as the first person is up. AND gets the coffee going!!!

Mmmmm this sounds SO good! We do something similar with eggs, cheese and jalapeno peppers, it is called Jalapeno Pie. I can’t wait to try this!!!
