Have you ever tried peanut butter cup blondies? These rich gooey brown sugar blondies are over the top with the addition of mini-Reese’s peanut butter cups. My boys thought they were amazing.

Brownies are always in season and this blondie recipe brings the peanut butter flavor you’ve been waiting for. As always, check with your group to identify anyone with a peanut allergy, because these definitely have peanuts in them.
How to Make Peanut Butter Blondies
You will need the following ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups firmly packed light brown sugar
- 1 1/2 tsp. vanilla extract
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup Reece’s Miniature Peanut Butter Cups
Instructions
- Prepare the baking pan by spraying an 8-inch square baking pan with cooking spray. Line with parchment paper.
2. In a saucepan, melt butter and brown sugar until sugar dissolves. Don’t boil. It might not dissolve all the way and that is okay. Let cool 10 minutes. Add in the eggs one at a time, beating well after each addition. Allowing the mixture to cool is important so you don’t get scrambled eggs.
3. Stir in vanilla. Fold in flour and salt. Make sure the mixture is completely cool and fold in the peanut butter cups. Scrape the batter into prepared pan and spread evenly.
4. Bake about 25-35 minutes. Be sure to not over bake. The top will turn golden brown and slightly puffed. Transfer the pan to a wire rack and let cool (if you can wait!). Cut into bars and serve.

how is one cup of PB Cups enough???? Do you cut them in halves? Or could you spread the mixture in the pan, then place PB Cups in the mixture?
