Healthy, Spicy, Protein Packed Sofritas Bowl: Make yours today!

So, my family and I love a good burrito bowl and I love serving them healthy, delicious food. This sofritas bowl recipe is the best of both. Extra firm tofu is a perfect swap for other proteins. Cumin, soy sauce, paprika, onion, chili powder, garlic powder, and cayenne pepper bring the flavor and just the right amount of heat.

The ingredients for this yummy sofritas bowl recipe are easy to find and probably already in your pantry and spice rack! The extra firm tofu, pico de gallo, lettuce, cilantro and guacamole will be the items you will need to pick up from the grocery store.

INGREDIENTS for your Sofritas Bowl

Round up your:

  • olive oil 
  • onion
  • extra firm tofu 
  • soy sauce 
  • chili powder 
  • garlic powder 
  • cumin 
  • paprika 
  • cayenne pepper
  • Salt and pepper  
  • brown rice
  • shredded lettuce 
  • black beans 
  • corn, fire-roasted  (regular corn works)
  • pico de gallo 
  • guacamole 
  • fresh cilantro

SUBSTITUTIONS OR ADDITIONS

Make it gluten-free by using Tamari in place of Soy Sauce.

Some Soy Sauce has additives derived from fish or other animal proteins. If you want to make sure you are making vegan burrito bowls check the ingredients of your Soy Sauce.

Pro Tip: Keep your guacamole bright green longer by adding lime juice and keeping the pit of your avocado in the bowl while storing.

HOW TO MAKE Sofritas Bowl

  1. In a large skillet heat oil and saute the onion and cook until semi-translucent, 3-4 minutes. Beginning Sofritas Bowl Recipe by sauteing onions in a large pan.
  2. Place a heavy plate on top tofu to press the water out of the tofu.
  3. Crumble the tofu into the pan over medium high heat, then use a spatula to continue to break it apart while cooking for 3-4 minutes, until slightly browned. Tofu added to the large pan with the onion cooked and crumbled into pieces for the sofritas bowl
  4. Add the soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne. Stir into the tofu and coat completely.Spices added to the large pan with the tofu and onions for the sofritas bowl.
  5. Continue to cook and break the tofu apart until browned and crumbly. Continuing to cook the tofu mixture in a large pan for the sofritas bowl.
  6. Assemble the layers of your burrito bowl starting with brown rice then lettuce, black beans, Tofu Sofritas, corn, salsa and/or chopped tomatoes, and guacamole.Tofu added to the sofritas bowl on top of the lettuce and black beans in a white serving dish.Adding the next layer of corn to the safritas bowl.

Serving and Storage

You can prepare one large burrito bowl and serve it family style, or, let your family build their own bowl, just like at Chipotle!

If there are any leftovers, store them in an airtight container in the refrigerator.

Sofritas Burrito Bowl

Popularized by Chipotle, this protein-packed alternative to meat comes together with spices and soy sauce.
Prep Time 3 minutes
Cook Time 15 minutes

Ingredients  

  • 1 tsp olive oil
  • 1 cup onion finely chopped
  • 14 oz extra firm tofu
  • 2 tablespoon soy sauce
  • 1 tablespoon chili powder
  • 2 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 pinch of cayenne pepper
  • Salt and pepper to taste
  • 4 cups brown rice cooked
  • 4 cups shredded lettuce
  • 1 can black beans
  • 1 can corn fire-roasted (regular corn works)
  • 1 cup pico de gallo
  • 1 cup guacamole
  • fresh cilantro for garnish

Instructions 

  • In a large skillet heat oil and saute the onion and cook until semi-translucent, 3-4 minutes.
  • Place a heavy plate on top tofu to press the water out of the tofu.
  • Crumble the tofu into the pan, then use a spatula to continue to break apart while cooking for 3-4 minutes, until slightly browned.
  • Add the soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne.
  • Continue to cook and break the tofu apart until browned and crumbly.
  • To assemble, Layer brown rice, lettuce, black beans, tofu sofritas, corn, corn, salsa or chopped tomatoes, guaccomole, top with cilantro

Notes

Make it gluten-free by using Tamari in place of Soy Sauce. Simply break apart your favorite extra firm tofu, mix in soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne, and cook until browned. Serve it in a bowl with rice or lettuce or use it as a taco filling.
