Change up your normal dinner routine with this delicious Instant Pot Chicken Curry. No need for take out because this is quick easy and good!  I say it all the time, “We wouldn’t have dinner if it wasn’t for the Instant Pot!”  It really have become a lifesaver.  We love all the pressure cooker recipes we can make.  From homemade spaghetti sauce in minutes to Honey Bourbon Chicken I am always at the variety of meals we can make with the Instant Pot!…… and don’t forget Instant Pot Desserts! Can I say pressure cooker cheesecake or Instant Pot chocolate chip pumpkin bundt cake!?!

Instant Pot Chicken Curry

1 small onion, peeled and quartered
2 teaspoons minced garlic, ( or 3 cloves)
1 red bell pepper
1 yellow bell pepper
1 ½ teaspoons Salt
1 tablespoon Garam Masala
1 tablespoon curry powder
2 tablespoons Sun Butter or other nut butter
1 can coconut milk, 10-13 ounces
8 ounces tomato paste
2 pounds boneless chicken breasts, cut into 1  to 1 1/2 inch chunks

Blend all ingredients except chicken in a food processor. Place chicken in inner pot. Pour sauce over. Lock the lid in place and seal steam nozzle.
Cook at high pressure for 8 minutes. Naturally release the pressure for 10 minutes, then quick release any
remaining pressure.
