  • 1 package of good quality (Ghirardelli or Guittard) white chocolate melts or white candy melts (about 10-12 ounces)
  • 2 pounds of large strawberries with stems (about 20), washed and dried very well and at room temperature
  • blue sanding sugar (blue sprinkles would also work)
  • baking sheet or serving tray
  • parchment paper
  • microwave and microwave-safe small bowl or double boiler

Step-by-Step Instructions for the Best Red White and Blue Strawberries

TIP: Scroll down and read the How to Make Your Own Double Boiler to read more detailed instructions on how to melt chocolate if you have never tried it before.

  1. Place the white chocolates into a heat-proof bowl if melting the chocolate in the microwave. Melt the chocolates in a microwave-safe bowl at half power, for 1 minute, stir, and then heat for 30-second intervals stirring at each interval until melted. Melt the chocolate or candy coating slowly. Chocolate that gets too hot will dry and thicken.
  2. Stir melted white chocolate until smooth.
  3. Line a sheet pan with parchment or wax paper. Holding the strawberry by the stem, dip the fruit into the white chocolate, lift and twist slightly, letting any excess chocolate fall back into the glass bowl. strawberry dipped in white chocolate

  6. Set the dipped strawberries aside until the chocolate sets, about 30 minutes

How to make your own double boiler:

  • Fill a saucepan ¼ full with water and bring the water to a low gentle boil.
  • Reduce the heat to the lowest setting and set a large (heat-proof) bowl on top, making sure the bowl tightly covers the pot. Make sure there are a few inches of space between the bottom of the bowl and the water.
  • Add chocolate to the bowl and stir constantly, until melted and smooth.
  • Remove the bowl from heat and add a handful of reserved chocolate to the bowl to temper the chocolate. Stir until the additional chocolate has melted.

Serving and Storage Tips

You can serve these beauties as soon as the chocolate is set. Store uncovered, out of direct sunlight, for 1 day. Then pop them in the refrigerator in airtight containers for up to 3 days. Chocolate-covered strawberries do not freeze well, because the strawberries will release juice when thawed.
