When fall season rolls around so many people start thinking about pumpkin. Personally, I crave sweet pumpkin treats all year round. To me, the flavors of pumpkin pie spices and the smell of pumpkin fill my senses, but more then that reminds me of family gatherings.
Did you know that pumpkin is a superfood? Yes, that is right in addition to being naturally sweet and great tasting pumpkin is loaded with nutrients. I like baking with pumpkin because it is an easy way to introduce beneficial nutrients to my family’s diet. It supports good eye health, known to boost the immune system, and provides a healthy dose of fiber and protein, amongst other benefits.
As a child, I couldn’t wait to get a slice of my grandma’s pumpkin bread. Now I share my favorite pumpkin bread and dessert recipes with my kids. They have so much fun exploring my recipe collection to find their favorites. Here are just a few of my latest pumpkin recipe finds and some of my personal recipes for you to try.
The delicious Pumpkin Spice Muffins from Pioneer Woman are perfect for breakfast. You can also whip up her cream cheese frosting recipe top the muffins. Viola, you have a sweet dessert.
Pumpkin Ale Cupcakes with Streusel Cream Cheese Frosting from Snappy Gourmet makes the best dessert. What makes this cupcake is the pumpkin and the pumpkin ale. (Yep, you read that right, there’s beer in this recipe.) Try using fall-colored muffin cups or mini bundt pans to make this cake fancier.
Tunnel O’ Fudge Pumpkin Cake from Diana’s Desserts combines pumpkin spice and creamy fudge together making a super moist cake. It’s the pumpkin puree that makes this cake so moist. It’s so delicious. You know me I love to give gifts and this cake makes a great gift for any holiday.
Pumpkin Bread Recipe from Skip to my Lou is the old fashioned sweet bread you’ve been craving. This recipe can also make great muffins. Simply prepare a muffin pan and reduce the cooking time for about 10 minutes. A moist and delicious quick bread either way.
Not only is it simple to make but it’s even easier to share. What’s great about this recipe is you can use personal size baking pans or regular size. The size will depend on who you’re baking for.
Pumpkin Cinnamon Chip Cookies from I heart Nap Time hit the mark for pumpkin and chocolate lovers. This sweet treat begins with a cake mix and uses a total of five ingredients! You won’t be able to wait to sink your teeth into this moist pumpkin and chocolate chip cookie. It’s just so delicious and easy, you will make them again and again.
This treat is great slightly warm or cooled completely. Yum.
Pumpkin Bars with Fluffy Cream Cheese Frosting from Cooking Classy serves up all the flavors of pumpkin pie in a moist bar. This recipe is a bit healthier than some as it replaces cooking oil with half apple sauce and melted butter. Doing this makes the bars even moister. This is another great recipe for big gatherings.
