The next time you’re looking for delicious salad recipes, this layered summer salad is a great addition to your dinner table; it is delicious and can be made a day ahead. It makes a perfect no-cook summer meal!

My southwest salad recipe is a gorgeous salad made with simple grocery store items, like romaine lettuce and frozen or fresh corn. It can be part of a low-calorie diet so I like to make it part of my weekly meal plan.

Southwestern Layered Salad Recipe

With healthy and simple ingredients, I’m sure this will become one of your favorite salads for summertime. Here are the ingredients you’ll need!

  • 1 head of lettuce (iceberg, romaine or your favorite), chopped
  • 1 can of black beans, rinsed and drained
  • 2 cups frozen corn, thawed
  • 1 bell pepper (yellow, green or red bell pepper), chopped
  • 1/4 to 1/2 cup red onion, finely chopped
  • 1 large tomato, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 cups grated cheddar cheese
  • 1/2 cup crushed tortilla chips

Southwestern Salad Dressing

  • 1/2 cup sour cream
  • 1/2 cup ranch salad dressing
  • 1/4 cup your favorite salsa

Step To Make Southwestern Summer Salad

Step 1

Let’s start with the dressing. Mix together the sour cream, ranch salad dressing and salsa.

Chop up the dressing ingredients and mix them together.

Step 2

Mix well and set the salad dressing aside while we work on layering the salad.

Step 3

It’s time to mix the whole salad! In a trifle or large bowl, layer the salad ingredients, starting with lettuce, black beans, and chopped-up onion.

Now let’s start cutting up the onion.

Step 4

Add a layer of delicious corn.

Step 5

The next layer is tomatoes, bell peppers, and cilantro.

It’s looking so good!

Step 6

Now garnish your salad with cheese, chips and more cilantro! You can add the salad dressing now or let everyone serve it on their own plate.

It’s time for the final touches!

If making for the next day, the only thing you have to do is leave tortilla strips out and add them in before serving.

Southwestern Summer Salad

Fresh summer salad that requires no cooking!
Prep Time 35 minutes

Ingredients  

Salad ingredients

  • 1 head lettuce (iceberg, romaine or your favorite), chopped
  • 1 can black beans rinsed and drained
  • 2 cups frozen corn thawed
  • 1 bell pepper
  • 1/4 to 1/2 cup red onion finely chopped
  • 1 large tomato chopped
  • 1/4 cup fresh cilantro chopped
  • 1 1/2 cups cheddar cheese grated
  • 1/2 cup tortilla chips crushed

Salad dressing

  • 1/2 cup sour cream
  • 1/2 cup ranch salad dressing
  • 1/4 cup your favorite salsa

Instructions 

Dressing

  • Mix together sour cream, ranch salad dressing and salsa. Set aside.

Layer salad

  • In a trifle or large bowl, layer the salad ingredients: lettuce, black beans, onions, corn, tomatoes, cilantro, bell pepper, salad dressing, cheese and chips. Garnish with cilantro and tomatoes.
  • If making for the next day, the only thing you have to do is leaving tortilla strips out and add them in before serving.

Extra tips

I’m a fan of cilantro, so I always add a little extra and a little bit of chili powder. If you want to make it more protein-dense, you can add a medium chicken breast marinated with fresh lime juice and garlic powder, a can of pinto beans and a splash of olive oil. Healthy and tasty!
