Hello! I’m Amy from DIY Candy! I’m excited to share a recipe that is perfect for the holidays – but it’s not necessarily the way that you might think. You see, I love to indulge during Christmas like anyone else, but I also like to be good the rest of the time so that I don’t feel so bad about the indulging. That’s where this veggie and cottage cheese omelette recipe comes in!

This omelette recipe includes turmeric, which has anti-inflammatory effects and is a very strong antioxidant. Add the spinach and you’ve got a power breakfast that is healthy and will make you feel great! You’ll be full and ready for a day of holiday activities. I’m one of those people that needs breakfast to function and if you do too, give this omelette a try.

  • 2 eggs, whisked with a fat pinch of turmeric, salt and freshly cracked black pepper
  • 2 Cup fresh spinach
  • 1 fat clove of garlic, sliced
  • 1 fat pinch of turmeric
  • 3 tbsp of ricotta cheese, as much liquid drained as possible
  • 1 tsp 1 tsp of coconut oil
  • Salt and freshly cracked black pepper to taste
  • Sliced cherry tomatoes (optional)

Melt 1 tsp of coconut oil in a thick bottomed pan and fry the garlic slices for 30 seconds. Add the spinach leaves to it. Season with salt and black pepper. Cook until it wilts and transfer to a bowl. To the same pan, add the remaining 1 tsp of coconut oil and swirl to coat. Pour the whisked egg into the pan and cook till it sets.


On one half of the egg, spread the cooked spinach. Top with the ricotta cheese. Season.

Then carefully flip the other side over. Slide it off onto a plate. Enjoy while warm.

    This looks yummy and healthy....a recipe I'll try!

    I am confused about the ingredients since the recipe name has cottage cheese in it, but no cottage cheese is included in the ingredients. Do you mean to use cottage cheese rather than the listed ricotta?
