Veggie and Cottage Cheese Omelette Recipe
Ingredients
- 2 eggs, whisked with a fat pinch of turmeric, salt and freshly cracked black pepper
- 2 Cup fresh spinach
- 1 fat clove of garlic, sliced
- 1 fat pinch of turmeric
- 3 tbsp of ricotta cheese, as much liquid drained as possible
- 1 tsp 1 tsp of coconut oil
- Salt and freshly cracked black pepper to taste
- Sliced cherry tomatoes (optional)

Melt 1 tsp of coconut oil in a thick bottomed pan and fry the garlic slices for 30 seconds. Add the spinach leaves to it. Season with salt and black pepper. Cook until it wilts and transfer to a bowl. To the same pan, add the remaining 1 tsp of coconut oil and swirl to coat. Pour the whisked egg into the pan and cook till it sets.
On one half of the egg, spread the cooked spinach. Top with the ricotta cheese. Season.
Then carefully flip the other side over. Slide it off onto a plate. Enjoy while warm.

I am confused about the ingredients since the recipe name has cottage cheese in it, but no cottage cheese is included in the ingredients. Do you mean to use cottage cheese rather than the listed ricotta?
