….a little slice of heaven!
Flourless Chocolate Cake
adapted from Gourmet
Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and butter paper.
Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.
…..simple and delicious!

I didn’t even know it was possible to bake a cake without using flour. You showed me something new today. I am really intrigued to give this a try. Thanks again for sharing.

Mmmmmmmm! Looks soooo yummy! I can’t wait to try it! What’s the consistency like? It looks almost like a brownie? Would this be considered gluten free?

Thank you for this! My birthday is in December, and I’ve been lamenting how I’ll celebrate with my usual chocolate fix now that I eat gluten-free. This is the perfect solution 🙂
Rachel says
Oh, I’ll have to try this. I made a different flourless chocolate torte recipe a few weeks ago that was a bit more involved and then came out underdone. I did manage to rebake it and save the ingredients from the trash, but it wasn’t really presentable enough to serve others. I definitely want to try your recipe. It looks a little more simple so hopefully it’ll come out better than my first attempt.
