One Pot Creamy Pasta INGREDIENTS
You will need to make this recipe
- olive oil
- 1 onion
- 3 cloves garlic, minced (about 3 teaspoons)
- tomato paste
- 1 pint grape tomatoes
- salt
- pepper
- 2 ½ cups vegetable broth
- 2 ½ cups non-dairy milk, unsweetened
- 16 oz dried rotini pasta (gluten-free)
- 5 oz fresh spinach, coarsely chopped
SUBSTITUTIONS
Add red pepper flakes to increase the heat of this vegan pasta recipe. Fresh basil, lemon juice, and sun-dried tomatoes also add flavor and complexity to this vegan pasta dish.
This recipe did not work for me with chickpea pasta.
HOW TO MAKE One Pot Creamy Pasta Easy
- In a large pot over medium heat, add the olive oil and onion and cook for 3-5 minutes until semi-translucent. Add the garlic and tomato paste and cook for 3 minutes more, stirring occasionally.
- Add the tomatoes and cook for 3-5 more minutes, until the skins begin to wrinkle, and tomatoes begin to release liquid. Your tomato sauce is underway.
- Season with salt and pepper, next add the vegetable broth, non-dairy milk, and pasta and stir until combined.
- Bring to a boil, then cover, reduce heat, and let simmer for 10 minutes or until most liquid is absorbed. Pasta will be al dente. Add the spinach and stir until wilted.
- Remove from heat and serve immediately.
Serving and Storage
Serve in bowls or on plates, adding fresh herbs on top of each serving. This plant-based pasta dish is just as good the next day, so refrigerate in an airtight container after the meal.
