Pressure Cooker Chicken Enchilada Soup
about 1 1/2 pounds chicken breasts,ย cut into 2 inch chunks
1 – 10 oz can red enchilada sauce
1 – 14oz can black beans, rinsed and drained
1 – 12 oz bag of frozenย corn
1 small can diced green chiles
1 – 14oz can diced tomatoes, with juice
1 – 14oz can chickenย broth
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon cumin
1 onion chopped
Toppings as desired
chopped cilantro
tortilla strips
sour cream
shredded cheese
avocado
Add all the ingredients to the pressureย cooker. Cook 10 minutes at high pressure. ย Release pressure. Shred chicken as needed.ย Serve with desired toppings.
