Instructions
Preheat the oven to 375°F.
Melt butter in a 13- x 9-inch baking dish. TIP: Place the baking dish in the oven while the oven preheats to melt the butter.
Combine peaches with ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon salt, ½ teaspoon cinnamon and 2 teaspoons lemon juice.
Cook peaches on medium heat for a couple minutes, just until the sugar is dissolved. This will also help to bring out juices from the peaches. Remove from heat and set aside.
Combine 1 cup flour, 3/4 cup sugar, 1 Tablespoon baking powder, ½ teaspoon vanilla, and ¼ teaspoon salt. ; Add milk, stirring until dry ingredients are moistened. Pour batter over butter (do not stir).
Pour peaches over batter (do not stir).
Bake at 375° for about 40 to 50 minutes or until golden brown and bubbly.
Serve the cobbler warm or cool, with a scoop of vanilla ice cream.
