Broccoli and Tofu Stir Fry

Equipment

Ingredients

  • 2 large servings Tofu (you can use gluten-free tofu cubes if necessary)
  • 1 pound Broccoli florets
  • 4 servings White rice
  • 1 tbsp Vegetable oil
  • 2 tbsp Sesame oil
  • 1 cup Vegetable broth
  • 4 cloves Garlic
  • 1 thick finger Ginger
  • 100 milliliters Soy sauce
  • 2 tbsp Honey
  • 25 milliliters Rice vinegar
  • 2 tbsp Cornstarch
  • 2 tbsp Water
  • 1 Scallions/Green onion

Instructions

  • Place a couple of sheets of paper towels on a plate and then put two blocks of tofu on top. Cover the blocks of tofu with a paper towel and put a plate over them. Put in the microwave and cook the tofu according to the recommended instructions for microwaving on the packaging.
  • Cut the tofu into 1-inch cubes when cooked.
  • Put some vegetable oil into a pan, along with some sesame oil. Stir fry the tofu. To ensure a little texture, you are aiming for golden brown crispy tofu blocks for a little texture.
  • In a separate pan, add the broccoli florets and some vegetable broth and cook on medium-high heat.
  • Now add some garlic, ginger, and sesame oil and cook for a little longer before adding soy sauce, honey for a little sweetness, rice vinegar, and some cornstarch mixed in a little water. These ingredients make a brilliant, yet simple stir fry sauce!
  • Start cooking the white rice.
  • Let the sauce reduce a little before adding the tofu cubes and toss through the broccoli.
  • Plate up your rice and add a generous portion of the broccoli and tofu stir fry on top. Garnish with scallions and enjoy!
