Fresh watermelon salad with a salty and refreshing punch. This summer salad has the perfect balance of watermelon, feta cheese, onion, and mint. Yum!

Ingredients
8cupscubed watermelon
1small Vidalia or other sweet mild onion thinly sliced
1/8cupred wine vinegar
Kosher salt to taste
pepper to taste
1/4cupextra-virgin olive oil
1tablespoonchopped fresh mint
2 - 4ouncesfeta cheesecrumbled
mint sprigs for garnish
Instructions
In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil. Add in the chopped mint, taste, and adjust seasonings.
In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed.
Garnish with mint sprigs.
Notes
You can make this salad a bit fancier by using a melon baller to make balls of watermelon versus cubes.
