How to make Sweet Potato Nachos
You will need 2 large sweet potatoes peeled and chopped into cubes. Toss cubed sweet potatoes with 2 tbsp olive oil, and 1/2 a packet of taco seasoning and 1/2 tsp salt.
Place potatoes on a cookie sheet lined with parchment paper or lightly sprayed with cooking spray. Roast sweet potatoes in the oven at 425 degrees for 40 minutes or until browned at edges (be sure to turn half way through).
Serve potatoes on blue corn chips and top with shredded cheese, sour cream, tomatoes, banana peppers, cilantro, green onion!
