Dairy Free Creamy Italian Salad Dressing

  • 3/4 cup raw, unsalted cashews soaked for at least 30 minutes a couple of hours is better)
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 2 tsp honey or maple syrup
  • 1/2 cup water
  • 1 clove garlic or 1/2 teaspoon garlic powder
  • 1/4 tsp yellow mustard (dijon or spicy brown also works)
  • 1/4 tsp paprika
  • 1 tbsp dried Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper


  • Add all of the ingredients to a high-powered blender and blenduntil completely smooth. (like a magic bullet)
  • Chill and then enjoy over salad.


If you did not soak your cashews the dressing might thicken, Just add
water to thin it.
