Preheat oven to 350°F. Spray a 9 x 13 baking pan with nonstick spray then line it with parchment paper, allowing some to hang over the long side of the dish to easily remove brownies.
Lightly spray paper once the pan is lined.
In a bowl, beat together eggs and sugar until pale and frothy. Beat until the color has lightened, this will dissolve the sugar and create the brownie’s crinkly top.
Stir in melted butter, vanilla extract, food coloring, and vinegar until combined.
Add flour, cocoa powder, and salt, until combined. Do not overmix.
Fold in 1 cup of white chocolate chips.
Pour batter into the prepared baking pan and bake for 20 to 30 minutes or until a toothpick inserted comes out mostly clean.
Allow brownies to cool completely before cutting.
