This is the moistest best tasting pumpkin bread! It also makes great muffins ( so good that one special family named me the Muffin Lady ).
The Best Pumpkin Bread!
3 1/2 Cups flour
1 1/2 tsp. salt
3 cups sugar
2 tsp. baking soda
1 Tablespoon cinnamon
4 eggs
1 15 oz. can pumpkin
1 Cup oil (I know not healthy--sorry)
3/4 Cup water
Stir flour, baking soda, salt , cinnamon and sugar together. Add oil, eggs, water and pumpkin. Bake at 350 degrees 35-45 minutes (will depend on size of bread pans or muffin size) or until tests done. (This recipe filled six of the bake and give loaf pans from King Arthur)

Oh man, perusing the King Arthur website is heaven. And thanks for reminding me it’s time to make pumpkin bread again. (Just did zucchini bread tonight with shredded zucchini I froze back in August. Yum.)

I love the pans and the recipe sounds good although I would do as someone else did and substitute applesauce (or pears sauce or pluots…) for the oil. I also do whole wheat and it adds a nice nutty flavor, but that is really for if we are eating rather than giving it away…

Oh, how I love King Arthur Flour. We went on vacation this summer and while the kids and my husband enjoyed a number of different museums and play areas…. I played at the King Arthur Flour store! I hope I get lucky!
I always use King Arthur unbleached flour when I bake, but I didn’t realize they had those little loaf pans. Those would be just the thing for bringing pumpkin-apple bread over to my father’s house. I hope I get a chance to try those out!
