Doritos Casserole

Easy taco casserole packed with beef, beans and veggies.

Ingredients

  • 1 cup chopped onion about 1 medium onion
  • 2 cloves garlic minced (2 teaspoons chopped)
  • 1 pound lean ground beef
  • 1 package taco seasoning mix
  • 1 10 ounce can Ro-tel tomatoes and chiles
  • 1 cup salsa
  • 1 can corn drained
  • 1 can black beans rinsed and drained
  • 1 cup sour cream
  • 2 cups grated cheddar cheese
  • 1 9.75- ounce bag Doritos chips very coarsely crushed
  • diced tomatoes, cilanto, jalapeños, diced avadado, sour cream optional garnishes

Instructions

  • Preheat the oven to 350°F.
  • In a large skillet, brown ground beef, chopped onions and garlic, over medium heat. Drain fat. Add in the taco seasoning, Ro-tel, and the salsa. Stir to combine. Remove from heat and stir in the sour cream.
  • Pour half of the meat mixture into the bottom of greased 9×13 baking dish. Top with 1 cup of the cheese and half of the Doritos. Repeat the process with the remaining ingredients, topping with the remaining 1 cup of the cheese.
  • Cover with foil and bake for 20 minutes. Remove the foil and bake for 10 more minutes.
  • Top with optional garnishes.
