Ingredients

  • 5-6 peaches cored,sliced and cut into ¼ inch-thick slices (about 5 cups)
  • 2 teaspoons lemon juice
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cups white sugar divided
  • ¼ cup brown sugar packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher or sea salt divided (a pinch if using table salt)
  • 1 cup milk
  • 1/2 teaspoon pure vanilla extract

Instructions

  • Preheat the oven to 375°F.
  • Melt butter in a 13- x 9-inch baking dish. TIP: Place the baking dish in the oven while the oven preheats to melt the butter.
  • Combine peaches with ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon salt, ½ teaspoon cinnamon and 2 teaspoons lemon juice.
  • Cook peaches on medium heat for a couple minutes, just until the sugar is dissolved. This will also help to bring out juices from the peaches. Remove from heat and set aside.
  • Combine 1 cup flour, 3/4 cup sugar, 1 Tablespoon baking powder, ½ teaspoon vanilla, and ¼ teaspoon salt. ; Add milk, stirring until dry ingredients are moistened. Pour batter over butter (do not stir).
  • Pour peaches over batter (do not stir).
  • Bake at 375° for about 40 to 50 minutes or until golden brown and bubbly.
  • Serve the cobbler warm or cool, with a scoop of vanilla ice cream.
