Peanut Butter Cup Blondies

Ingredients

  • 1/2 cup 1 stick unsalted butter
  • 1 1/2 cups firmly packed light brown sugar
  • 1 1/2 tsp. vanilla extract
  • 2 eggs
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup Reece's Miniature Peanut Butter Cups

Instructions

  1. Preheat an oven to 350°F. Spray an 8-inch  square baking pan with cooking spray. Line with parchment paper.

  2. In saucepan, melt butter and brown sugar until sugar dissolves (it might not dissolve all the way). Let cool 10 minutes. Add in the eggs one at a time, beating well after each addition.  Stir in vanilla. Fold in flour and salt. Make sure mixture is completely cool and fold in the peanut butter cups. Scrape the batter into prepared pan and spread evenly.

  3. Bake about 25-35  minutes. Don't over bake.  Top will turn golden brown and slightly puffed.  Transfer the pan to a wire rack and let cool. Cut into bars and serve. Makes about 16 bars.

Recipe Notes

Be sure to line the pan with parchment paper to make the bars easier to remove from the pan.  I spray the pan, lay in the parchment paper then spray the top.
