Cajun Pickles

Equipment

Ingredients

  • 4 - 6 fresh pickling cucumbers
  • 1 cup of vinegar
  • 3 cups of water
  • 2 tablespoons Tony Chachere's Lite Creole Seasoning
  • 1 fresh jalapeño pepper sliced
  • 4 garlic cloves sliced
  • 1 teaspoon dried onion flakes

Instructions

  • Slice your cucumbers into 1/4 inch thick pieces.
    Put the fresh cucumber slices, the sliced garlic, and jalapeno slices in a quart mason jar until the jar is full.
    In a sauce pan on the stove, heat the vinegar, water, Creole seasoning and onion flakes until the mixture is boiling.
    Place the mason jar with the cucumber slices in the sink and carefully pour the hot liquid mixture over the cucumbers until the jar is full of liquid.
    Let the jar stand until cool enough to place a lid on it and put in the refrigerator.

Notes

TIP: The longer these marinate, the better they are so you may want to do these at least the night before using!
