Pressure Cooker Sloppy Joes

Your Instant Pot comes to the rescue for a quick and easy kid pleasing meal. The best part is the sloppy joes can be made ahead of time and frozen for a last minute meal.

Ingredients

  • 2 pounds ground beef, cooked
  • 1 onion, chopped (about 1 1/2 cups)
  • 1/4 cup green bell pepper chopped
  • 2 carrots, grated
  • 1 14 ounce canned diced tomatoes
  • 1/2 cup water
  • 1 can tomato paste
  • 1/4 cup cider vinegar
  • 2 Tablespoon brown sugar
  • 2 teaspoon dry mustard
  • 2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup beef broth (or water)

Instructions

  • Pour 1 cup of beef broth in your Instant Pot. Add in all the other ingredients. Cook high pressure for 8 minutes.

FREEZE INSTRUCTIONS

    Place all ingredients (EXCEPT Beef Broth) in a round freezer container.

      On day you want to eat the sloppy joes, place 1 cup beef broth and frozen meat into the Instant Pot. Cook on hight pressure for 10 minutes. Quick Release. Once Instant Pot is done, stir well and serve on buns.
