Place one cup of flour, 1.5 cups of sugar, one teaspoon of cinnamon, and one teaspoon of salt in a bowl and toss through until all the ingredients are thoroughly mixed.
Place your already sliced apples in a bowl and sprinkle, then fold the mixture through thoroughly.
Place the apples on the pastry. Pile them up, but leave about a 2-inch border.
Make the crumble for the topping by adding the remaining flour, sugar, salt, cinnamon, allspice, and butter to the bowl of a food processor. Using the pulse button, blitz the ingredients until you have a crumbly mixture. Add that to the top of the apple crostata and fold the outer pastry upwards to hold all the contents as shown in the image below.
Now bake in the oven till the apples are cooked and your crostata is golden brown.
