White Chocolate and Peppermint Covered Popcorn InGredients

  • 16 oz. white chocolate (can use white chocolate baking morsels) or almond bark
  • 1 cup finely crushed (like sand) peppermints (about 10-12 candy canes or 40 mints) I crush my peppermints in my food processor. The mints will scratch the plastic.
  • 4 quarts popped popcorn (about 1/2 cup  corn kernels) I used this to pop my corn, so it had salt. If you are using air popped corn, throw in a pinch of salt when you sprinkle in the crushed peppermints.

How to make White Chocolate and Peppermint Covered Popcorn

  1. Pop popcorn. If you are using air popped corn, throw a pinch of salt in when you sprinkle in the crushed peppermints.

2. Slowly heat the white chocolate chips or almond bark until completely melted in the microwave or on stove-top with double boiler. Stir often to keep chocolate from burning.

3. Stir 1/2 cup crushed candy canes into the white chocolate.

4. Place popped corn into a large bowl. Pour melted white chocolate and peppermint mixture over the popcorn. Gently stir to coat popcorn while sprinkling remaining crushed peppermints over the popcorn.

5. Pour this holiday treat out onto a parchment paper or waxed paper lined baking sheet and allow coating to harden.

6. Store in an airtight container, if there are any leftovers!

  2. WELL — SEEMS AS THO I HAD AN EPIC FAIL ON MELTING THE BAG OF WHITE BAKING CHIPS (COULDN’T FIND ALMOND BARK IN THE GROCERY STORE). IT NEVER DID MELT TO A POURING / COATING CONSISTENCY — SO I ADDED SOME 1/2 AND 1/2 — MAYBE A BIT TOO MUCH? MY POPCORN SEEMS AS THO IT WILL NEVER “SET UP”.

    ANYONE ELSE HAVE THIS PROBLEM?
