It doesn’t look red, but this pressure cooker red lentil soup is amazing and really does use red lentils. I love my pressure cooker. I have been cooking with my electric InstantPot for over a year now and it has made a huge difference in meal planning for my family. The pressure cooker has become my weapon again unhealthy takeout. With the pressure cooker I  can quickly get a tasty and nutritious meal on the table in minutes.

The pressure cooker has helped me make allergy free meals. While finding out which foods are causing my body issues I am able to cook up delicious allergy free meals. I have EoE (Eosinophilic Esophagitis) and have been working my way through the six food elimination diet. For eight weeks I am eliminating wheat, eggs, nuts, fish, dairy and soy. You won’t find any of those ingredients in this soup. So if you too are needing dairy free, wheat free, egg free and soy free meal ideas stay tuned. I will be sharing what I have been eating. These allergy free meals are family friendly. I decided the elimination diet is overwhelming enough that I can’t cook two meals. My family must eat what I need to eat and think it is yummy!

Pressure Cooker Red Lentil Soup

Keep an onion on hand or chopped onions in the freezer along with a ham hock or shank and a few pantry items and you can make this pressure cooker soup anytime.

Allergy Free Pressure Cooker Red Lentil Soup

1 onion, chopped
4 garlic cloves, minced
1 tablespoons olive oil
2 carrots, chopped
2 celery ribs, chopped
1 teaspoon ground cumin
4 cups chicken broth
1 cup dry red lentils, rinsed and picked
2 bay leaves
1 ham shank or ham hock
salt and pepper
In  pressure cooker,  using saute  setting cook onions and garlic in olive oil until onions are translucent. Do not brown garlic. It will make the garlic bitter. Add the carrots, celery, ham shank, lentils, bay leaf, chicken broth and cumin.

Set pressure cooker for high pressure for 18 minutes. Use quick release or let the pressure come down on its own.
Remove the bay leaves.

Season with salt and fresh ground pepper to taste and enjoy!

The cornbread in the picture isn’t allergy friendly.  Thankfully I don’t miss things like that so my family can still enjoy those types of breads with their meals. I am working on a few of those recipes!
