Pimento cheese is one of those foods that stands the test of time. It is also super easy to make and extra delicious.  The best part is you know exactly what is in your spread, opposed to what might be in it when you get it from the grocery store deli.

Be sure to use extra sharp cheese. We also like it with Borden’s Triple Cheese Blend. If you like it a touch more creamy just add a bit more mayonnaise.  High-quality mayonnaise, such as Hellmann’s or Duke’s, is a must. People say this spread is a southern recipe, but I live in the midwest and grew up eating it.  This recipe really is the perfect blend of grated cheddar cheese, cream cheese, mayo and spices. Be prepared for a rich cheese spread that you can’t stop eating! So make up a batch!

Pimento Cheese Spread

While pimento cheese makes an amazing sandwich, it is also delicious on crackers for a great appetizer. It is also wonderful stuffed inside celery, small peppers, hollowed our tomatoes or dolloped on cucumber slices.  I think I am going to have to try it baked inside of jalapenos. Wouldn’t that be delicious!! If you need something for a shower, this spread also makes great tea sandwiches.
