A sweet, fragrant summer gift from your kitchen that will warm up a winter day; this Peach Salsa recipe is that gift! This recipe came to life when a friend gave us some delicious peaches perfect for canning.
If you are new to the canning process, I am here to guide you every step of the way! This peach salsa recipe is a great one for new and experienced canners alike. I know I just love to look at all my pretty jars at the end and think about what fun it will be to share them with my friends and family.
Gather these Ingredients for 6 Pints of this Peachy Salsa
- fresh peaches (about 12)
- onion
- red bell pepper
- jalapeno peppers
- fresh cilantro
- garlic cloves
- ground cumin
- white vinegar
- lime zest
- white sugar
- fruit pectin crystals
- sugar
- 6 – pint canning jars
Preparing your Fresh peaches For Easy Chopping
- Peel your peaches by placing them in boiling water for about 45 seconds. I do all the peaches at once.
- Plunge the peaches in an ice bath. The skins will now come off easily. Once skins are removed replace peaches back into the ice bath while they are waiting to be chopped to keep them from turning dark.
- Remove the seeds and chop your peaches!
Let’s get started
- Wash jars and lids in soapy water. Rinse well. Dry bands and set aside.
- Place jars and lids in water and allow to simmer (not boil) until ready to use.
- In a large saucepan, combine peaches, onion, pepper, cilantro, garlic, cumin, vinegar, and lime zest.
- Mix pectin with 1/4 sugar and add to your peach mixture.
- Bring to a boil and then add the remaining 1 1/2 cups of sugar.
- Boil for 1 minute stirring constantly. Remove from heat.
- Pour into prepared pint jars, leaving 1/4 inch air space. Wipe the rim and threads of the jar with a clean damp cloth. Place lid and rings on jars, just until resistance is met.
- Place jars in a large pot and cover them with water 1-2″ over jars. Boil for 15 minutes.
- Carefully remove jars and allow them to cool completely.
- After the jars have completely cooled check for proper seal. Press on the center of the lid. It should be firm, pulled down, and not flex. Tighten rings.
Pour Peach Salsa over a brick of cream cheese and serve with crackers! YUM!!
Homemade Peach Salsa Recipe
Ingredients
- 6 cups peaches peeled pitted, and chopped (about 12 peaches)
- 1/2 cup onion chopped
- 1/2 cup red bell pepper chopped
- 4 jalapeno peppers finely chopped remove seeds and ribs
- 1/4 cup fresh cilantro chopped
- 3 garlic cloves minced
- 1 1/2 teaspoons ground cumin
- 1/4 cup white vinegar
- 1 teaspoon grated lime zest
- 1/4 cup white sugar
- 1 small box of fruit pectin crystals 49gram
- 1 1/2 cups sugar
- 6 – pint canning jars

Serving and Storing your Peach Salsa
This fresh peach salsa recipe is delicious served with crackers as stated above AND it tastes amazing with tortilla chips, too!
Are you a pepper aficionado? You can add a habanero pepper to significantly increase the heat of this salsa. If you add a habanero pepper, you don’t need the jalapenos.
Fresh ripe peaches may not be available at your farmer’s market or grocery store at the time you want to make this, so you could dice fresh mangos as a substitute for peaches if they are available. Peaches and mangos have similar flavors and if you haven’t tasted it, mango salsa is delicious!
After opening, store your salsa in the refrigerator.
