I love soup with homemade noodles! Here in Kansas, it is cold outside and a bowl of chicken noodle soup is a sure way to warm up.  You can make amazing soup with homemade noodles! It really isn’t that hard and uses ingredients you probably already have on hand. While the noodles are easy to make they do take time, so allow a couple of hours from start to finish. It is not all hands on though, the noodles have about a two hour drying time!

Homemade Noodle Recipe

2 eggs
1/4 cup milk
3/4 teaspoon salt
1/4 teaspoon dried thyme
2 cups flour

Lightly beat eggs. Add in milk, salt and thyme. Stir in enough of the flour to make a stiff dough. Cover dough and let it rest 10 minutes.

Divide dough in half and get prepared for a workout! On a floured surface roll dough (half at a time) into a 12″ X 16″ rectangle. This takes some work and you might not actually get it that big. The point is the dough should be really thin! Once rolled, let dough stand 20 minutes.

Loosely roll up the dough.

Cut dough into 1/4 inch slices. (The noodles will almost double in size when cooked)

Unroll slices.

Cut into desired lengths. I usually cut into 1 to 2 inch lengths. Spread out noodles and allow to dry on a rack for 2 hours.

Add noodles to your favorite soup, allowing to cook about 10 minutes until soft and tender. I love these noodle in this Turkey Noodle Soup Recipe.

  1. Love this recipe. Reminds me of my grandmother’s homemade noodles. My only change was the thyme. First time I made them the thyme was too overpowering. Left it out this time. This recipe is a keeper!

  2. Noodles freeze well. I usually layer them in a long plastic food storage container with waxed paper between layers. The container keeps them from breaking up in the freezer. Then I just take out what’s needed for a meal. I usually make a triple or quadruple batch, why not, since it really does not take much longer, then you have noodles when your ready.
