This time of year is very busy and we have been making one pot meals almost every night. This one pot macaroni and cheese is easy enough I can have my son make it for the family! It will be a good meal he can share, as he heads off to college next year. For the other one pot meals I have shared this week try my one pot pizza pasta or my one pot alfredo. These are all easy recipes your family will love!

One Pot Macaroni and Cheese

16 ounces uncooked macaroni
1 – 14 ounce can chicken broth
1 can of evaporated milk
1 1/2 cups water
1/4 cup butter
1/2 tsp salt
3 cups grated cheddar cheese (I use sharp cheddar)

In large pot, heat evaporated milk, chicken broth, water, butter, uncooked macaroni and salt to boiling over high heat. Reduce heat to medium-high; cook 6 minutes, stirring frequently. Reduce heat; simmer uncovered  about 5 – 8 minutes until macaroni is soft, stirring frequently; do not drain.
Remove from heat; stir in cheese.
