Meet my favorite sandwich, the Caprese Sandwich. It tastes so fresh and delicious and is made in minutes. We first started eating these when we lived in Germany. My neighbor packed us lunches for the park one day and I was hooked.
So when your garden produces loads of tomatoes and basil…… make a caprese sandwich.
How to make a Caprese Sandwich
All you need is fresh mozzarella,basil, ciabatta bread and pesto –the secret ingredient that puts this caprese sandwich ahead of all the others! This sandwich is also fantastic grilled. We place ours in a panini grill for a few minutes to make a toasted sandwich with gooey cheese. If you don’t have a panini grill you can easily toast in a skillet. I like to flatten the sandwich so I place another smaller skillet on top or a brick wrapped in aluminum foil.
This sandwich is also great made with a French baguette. It is also really good with a drizzle of balsamic vinegar!
Caprese Sandwich
Ingredients
- tomato, sliced
- a couple fresh basil leaves
- fresh mozzarella, sliced
- 1 tbsp pesto more or less to taste
Instructions
- Slice the bread and generously spread pesto on each side. Stack bread with sliced tomatoes, fresh mozzarella and basil leaves. Salt and pepper if you like.
