This is an easy meal that can be made in about 30 minutes. It is not fancy or pretty, but it is quick and yummy!
Chili Mac Recipe
1 lb lean ground beef (I use lean ground turkey)
1 small to medium onion, chopped
1 bell pepper (any color), chopped
3-4 cloves garlic, pressed
2 cups pasta (like elbow macaroni or I use Heartland 100% Whole Wheat Rotini), uncooked
2 cans – 14.5 diced tomatoes (or 1 -28 ounce can) undrained
1 cup water
2 tsp. cumin
1 Tablespoon chili powder
salt and pepper
1 – 2 cups grated cheddar cheese
In large skillet, brown meat (remove excess fat if necessary). Add onion, peppers and garlic, cook until vegetables are tender. Stir in spices and heat a minute until fragrant. Add water, tomatoes and uncooked pasta. Cover and simmer 20 minutes or until pasta is tender. Uncover and cook another 5 minutes, sprinkle grated cheese on top. Enjoy!
